Fairmount: Rybread Cafe Opening New Location in Brewerytown

Rybread Cafe has plans to expand from its location at 2139 Fairmount Ave.

“We didn’t want to expand originally, but we had to in order to provide more seating, a bigger kitchen and more catering,” said Rybread co-manager Stephanie Mertz.

The main attraction at the new location on 28th Street and Girard Avenue will be bottled beer.

“People will be able to order six packs, seat themselves and order from the counter,” Mertz said.  “It will be similar to your local pizza shop back home, very informal.”

The new 2,000-square-foot cafe offers more seating than the Fairmount location. At first, Mertz said she was worried the original location would lose customers if the new shop was in the same neighborhood. However, she said it is not an issue anymore because the new shop is far enough away from Fairmount Avenue.

“We didn’t want anything too close and Brewerytown is on the border of the Fairmount neighborhood,” Mertz said.

The gourmet sandwich shop opened in 2010 and has since become popular with the local community. The shop serves gourmet sandwiches, coffee and fresh baked goods.

Employee Dennis Pollock said he believes the shop has no competition in the neighborhood.

“We are unique,” he said.

The Fairmount store was named after Ryan Pollock, the owner.

“My son and I, we love working with people. We love customers,” Pollock said.

Pollock and his son saw potential in Fairmount and decided to take advantage of the opportunity.

“We did our research and saw that this is a good, growing area and the area needed a sandwich and bread shop. So we went for it,” Pollock said.

The new cafe does not have a name but is scheduled to open in May.
